Chickpeas contain a lot of protein, as well as iron and magnesium.
Ingredients
- 1/2 carrot, shredded
- 1/4 onion, sliced
- 1 cup cabbage, shredded
- 1/2 cup mixed lettuce
- 1/4 cup bean sprouts
- tsp olive oil
- 1 garlic clove
- 1/2 zucchini
- 1/2 can chickpeas
- 1 tsp paprika
- 1/2 tsp tumeric
- 1 tsp nutmeg
- 2 tsp mixed herbs
- salt & pepper
- 1/4 cup water
Method
- Prepare salad ingredients in a bowl
- Pan fry garlic, oil in a saucepan for 2 minutes and add zucchini and chickpeas
- Add all spices, salt and pepper and water
- Boil and stir for 10 minutes or until sauce has thickened
- Cool and add to salad ingredients, stir and enjoy
