Chickpea Asian Salad

Chickpeas contain a lot of protein, as well as iron and magnesium.


  • 1/2 carrot, shredded
  • 1/4 onion, sliced
  • 1 cup cabbage, shredded
  • 1/2 cup mixed lettuce
  • 1/4 cup bean sprouts
  • tsp olive oil
  • 1 garlic clove
  • 1/2 zucchini
  • 1/2 can chickpeas
  • 1 tsp paprika
  • 1/2 tsp tumeric
  • 1 tsp nutmeg
  • 2 tsp mixed herbs
  • salt & pepper
  • 1/4 cup water


  1. Prepare salad ingredients in a bowl
  2. Pan fry garlic, oil in a saucepan for 2 minutes and add zucchini and chickpeas
  3. Add all spices, salt and pepper and water
  4. Boil and stir for 10 minutes or until sauce has thickened
  5. Cool and add to salad ingredients, stir and enjoy
